- 8 chicken pieces
- 4 potatoes
- 100 ml lemon juice
- 100 ml olive oil
- 5 garlic cloves
- 1 large onion
- 1 tbsp fresh rosemary
- 1.5 tbsp honey
- 1.5 tbsp mustard
- Salt
- Pepper
- Oregano
- Paprika
Instructions
- Preheat the oven to 175°C (fan forced). Line a baking dish with parchment paper.
- Arrange chicken pieces skin-side up in the dish. Cut potatoes to desired thickness and place around the chicken.
- Season generously with salt, pepper, oregano, and paprika.
- In a blender, combine lemon juice, olive oil, garlic, onion, rosemary, honey, and mustard; blend until smooth.
- Pour half of the marinade over chicken (skin side down) and potatoes.
- Flip chicken skin-side up and cover with remaining marinade.
- Cover with wet baking paper and aluminum foil; bake for about 90 minutes.
- Remove covers and bake for an additional 30 minutes until golden brown and crispy.
- Let rest for 10 minutes before serving.
