  • 8 bone-in chicken thighs
  • ⅓ cup extra-virgin olive oil
  • ¼ cup lemon juice
  • 4 garlic cloves (minced)
  • 1 tablespoon dried oregano
  • 2 teaspoons dried thyme
  • 2 teaspoons Dijon mustard
  • 2 teaspoons kosher salt
  • 1 teaspoon freshly ground black pepper


Instructions

  1. In a mixing bowl, whisk together olive oil, lemon juice, garlic, oregano, thyme, Dijon mustard, salt, and pepper.
  2. Place chicken thighs in a large bowl and pour marinade over them. Ensure all pieces are well coated. Cover and refrigerate for 1 to 2 hours (up to 8 hours for enhanced flavor).
  3. Preheat oven to 350°F (180°C). Transfer marinated chicken to a roasting pan and pour any remaining marinade on top.
  4. Bake for 40 to 45 minutes until the internal temperature reaches 175°F (80°C). For crispy skin, baste occasionally and broil for an additional 2 to 3 minutes if desired.
