  • 2 boneless, skinless chicken breasts (about 1 pound)
  • 4 cups mixed salad greens (spinach, arugula, and romaine)
  • 1 cup pineapple chunks (fresh or canned)
  • 1 red bell pepper (diced)
  • 1 avocado (diced)
  • 1/2 cup shredded carrots
  • 1/4 cup green onions (chopped)
  • 1/3 cup Greek yogurt
  • 2 tablespoons mayonnaise
  • 2 tablespoons lime juice
  • 1 tablespoon honey
  • 1 teaspoon soy sauce
  • salt and pepper to taste


Instructions

  1. Preheat your grill or grill pan to medium-high heat.
  2. Season the chicken breasts with salt and pepper. Grill for about 6-7 minutes on each side until fully cooked. Let rest before slicing.
  3. In a large salad bowl, combine mixed greens, pineapple chunks, diced bell pepper, avocado, shredded carrots, and chopped green onions. Toss gently.
  4. In a mixing bowl, whisk together Greek yogurt, mayonnaise, lime juice, honey, soy sauce, and seasoning until smooth.
  5. Add sliced grilled chicken on top of the salad mixture and drizzle with dressing. Toss gently to combine.
  6. Serve immediately or chill for up to an hour before serving.
