- 1 lb boneless skinless chicken thighs
- 1 cup fresh pineapple (cut into chunks)
- 1 small red onion (sliced)
- 1 large carrot (shredded)
- 1 whole avocado (sliced)
- 1 cup baby cucumbers (sliced)
- 2 stalks spring onions (chopped)
- 2 cloves grated garlic
- 1 tbsp grated ginger
- 1 cup cooked edamame beans
- 3 tbsp soy sauce
- 1 tbsp maple syrup
- 1 tbsp apple vinegar
- 1 tbsp tomato paste
- 2 tbsp pineapple juice
- 1 tbsp sriracha
- 1 tbsp sesame oil
- 1 tbsp toasted sesame seeds
Instructions
- Prepare the jasmine rice according to package instructions and set aside.
- In a mixing bowl, combine grated garlic, grated ginger, soy sauce, maple syrup, apple vinegar, tomato paste, pineapple juice, sriracha, and sesame oil. Add chicken thighs and let marinate for at least 15 minutes.
- Heat a skillet over medium-high heat and cook marinated chicken thighs for about 6-8 minutes on each side until golden brown and cooked through. Let rest before slicing.
- Assemble bowls by layering cooked rice as a base and adding sliced chicken, pineapple chunks, edamame beans, red onion slices, shredded carrot, avocado slices, baby cucumbers, and chopped spring onions.
- Drizzle any remaining marinade over the top if desired and finish with toasted sesame seeds.
