Ingredients
- 1 cup heavy cream (or half-and-half)
- 1 cup whole milk (or skim milk)
- 1 pound white fish (haddock, cod, or halibut)
- 1 pound shrimp
- 2 medium potatoes
- 2 cloves garlic
- 1 medium onion
- 4 cups seafood stock (or chicken stock)
- Fresh herbs (thyme, bay leaf)
Instructions
- Prepare all ingredients: wash and chop vegetables into small pieces.
- In a large pot, heat oil over medium heat and sauté chopped onion until translucent. Add minced garlic and cook for an additional minute.
- Add diced potatoes and pour in seafood stock. Simmer until potatoes are tender, about 15 minutes.
- Gently add white fish, shrimp, and scallops if using. Cook until shrimp is pink, about 5–7 minutes.
- Stir in heavy cream and milk; mix well. Optionally add white apple vinegar and season with salt, pepper, thyme, and bay leaves.
- Allow to simmer for another 5 minutes before serving.
