  • 1 tablespoon oil (optional)
  • 1 large yellow onion, chopped
  • 10 ounces mushrooms, sliced
  • 5 cloves garlic, minced
  • 1 ½ teaspoons dried Italian herb blend
  • 2 medium carrots, sliced
  • 1 ½ pounds yellow potatoes, cubed
  • 1 can (14.5 oz) crushed tomatoes
  • 3 ½ cups vegetable broth
  • 1 bay leaf
  • 1 tablespoon tamari or soy sauce
  • 1 can (15 oz) chickpeas, rinsed and drained


Instructions

  1. Preheat a large soup pot over medium heat. Add oil if using. Sauté the onion and mushrooms for about 8 minutes until softened.
  2. Stir in minced garlic, dried herbs, and carrots; cook for another 2 to 3 minutes until fragrant.
  3. Add crushed tomatoes, diced potatoes, vegetable broth, bay leaf, tamari or soy sauce, salt, and pepper. Bring to a simmer then reduce heat to low. Cover and simmer for about 20 minutes until the potatoes are tender.
  4. Mix in chickpeas and cook uncovered for a few additional minutes until the stew thickens.
  5. Remove bay leaf before serving. Adjust seasoning as desired.
