- 1 tablespoon oil (optional)
- 1 large yellow onion, chopped
- 10 ounces mushrooms, sliced
- 5 cloves garlic, minced
- 1 ½ teaspoons dried Italian herb blend
- 2 medium carrots, sliced
- 1 ½ pounds yellow potatoes, cubed
- 1 can (14.5 oz) crushed tomatoes
- 3 ½ cups vegetable broth
- 1 bay leaf
- 1 tablespoon tamari or soy sauce
- 1 can (15 oz) chickpeas, rinsed and drained
Instructions
- Preheat a large soup pot over medium heat. Add oil if using. Sauté the onion and mushrooms for about 8 minutes until softened.
- Stir in minced garlic, dried herbs, and carrots; cook for another 2 to 3 minutes until fragrant.
- Add crushed tomatoes, diced potatoes, vegetable broth, bay leaf, tamari or soy sauce, salt, and pepper. Bring to a simmer then reduce heat to low. Cover and simmer for about 20 minutes until the potatoes are tender.
- Mix in chickpeas and cook uncovered for a few additional minutes until the stew thickens.
- Remove bay leaf before serving. Adjust seasoning as desired.
