  • 2 large eggs
  • 3/4 cup light brown sugar (packed)
  • 3/4 cup granulated sugar
  • 1 tablespoon vanilla extract
  • 1 teaspoon red gel food coloring
  • 1/4 cup Oreo cookie crumbs (about 3 cookies)
  • 3/4 cup semisweet chocolate chips


Instructions

  1. Melt the butter in a medium saucepan; let cool.
  2. Crush 3 Oreos into fine crumbs and set aside.
  3. In a mixing bowl, sift together flour, cocoa powder, baking soda, cornstarch, and salt.
  4. In a stand mixer, combine cooled melted butter with sugars until creamy. Add eggs one at a time, then mix in vanilla and food coloring.
  5. Gradually add dry ingredients to wet mixture until just combined. Fold in chocolate chips and Oreo crumbs; refrigerate dough for 3 hours.
  6. Preheat oven to 350°F (175°C). Scoop dough onto parchment-lined baking sheets and bake for 12-14 minutes.
