- 5 cups fresh strawberries, hulled and quartered
- 3 tbsp granulated sugar
- 2 and 3/4 cups all-purpose flour, spooned & leveled
- 1/4 cup + 2 tbsp granulated sugar
- 4 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/4 tsp cinnamon
- 3/4 cup salted butter, cubed & cold
- 1 cup cold buttermilk + 1-2 tsp extra
- 1-2 tbsp heavy cream, for brushing tops of biscuits
- Coarse sugar, for sprinkling
- 1 and 1/4 cups cold heavy cream
- 3 tbsp powdered sugar
- 1 tbsp vanilla extract
Instructions
- Prepare strawberries by hulling and quartering them, then mix with sugar and optional jam. Chill in the fridge.
- Make biscuits by combining dry ingredients, cutting in cold butter, and mixing in buttermilk to form dough. Shape, fold, and cut into biscuit rounds.
- Chill biscuits before baking on a parchment-lined sheet at 400°F (204°C) for 20-24 minutes until golden brown.
- Whip the cream with powdered sugar and vanilla until stiff peaks form.
