  • 4 boneless skinless chicken breasts
  • 3/41 cup plain Greek yogurt (or dairy-free alternative)
  • 2 tablespoons yellow mustard
  • 2 tablespoons Dijon mustard
  • 2-3 tablespoons honey
  • 4 cups romaine lettuce, chopped
  • 1 cup crumbled gorgonzola cheese (or feta)
  • 1 cup slivered almonds
  • 1 1/2 cups blueberries
  • 1/2 cup dried cranberries or cherries


Instructions

  1. For the dressing, combine yogurt, yellow mustard, Dijon mustard, honey, lemon zest, salt, and pepper in a mason jar. Shake well until mixed; refrigerate until needed.
  2. Marinate the chicken by whisking together soy sauce, olive oil, Worcestershire sauce, garlic, lemon juice, zest, salt, and pepper in a bowl. Coat the chicken and let it marinate for at least 30 minutes.
  3. Grill the marinated chicken on medium heat for about 4-5 minutes per side until cooked through (internal temperature of 160°F). Allow resting for 5 minutes before slicing.
  4. Assemble the salad by dividing chopped romaine into serving bowls. Top with sliced grilled chicken, gorgonzola cheese, almonds, blueberries, and cranberries. Drizzle with dressing just before serving.
