  • 2 1/4 cups mashed overripe bananas
  • 2 cups all-purpose flour
  • 1/4 tsp salt
  • 1 tsp baking soda
  • 1/2 tsp nutmeg
  • 1/2 cup butter
  • 1/4 cup white sugar
  • 1/4 cup brown sugar
  • 2 eggs, beaten
  • 1 tsp vanilla extract
  • 1 tsp cinnamon


Instructions

  1. Mash the bananas until you have about 2 1/4 cups.
  2. In a bowl, combine flour, salt, baking soda, and nutmeg.
  3. In another bowl, cream together butter and sugars. Add cinnamon, beaten eggs, and mashed bananas; stir to combine.
  4. Fold the wet mixture into the dry ingredients carefully.
  5. Pour batter into a greased baking pan.
  6. Place the trivet in your Instant Pot with 1 cup of water; cover the pan with aluminum foil.
  7. Cook on manual mode for 50 minutes; perform a quick release when done.
  8. Allow to cool slightly before transferring to a wire rack.
