  • 1 tablespoon oil
  • 1 pound boneless, skinless chicken breast (diced)
  • 1 onion (sliced)
  • 1 can (8 oz) pineapple chunks (in juice)
  • 1/2 cup BBQ sauce
  • 1 red pepper (diced)
  • 1 yellow pepper (diced)
  • 1 cup white rice
  • 1 cup water


Instructions

  1. Set the Instant Pot to sauté mode. Add oil and diced chicken; season with salt and pepper. Cook until browned.
  2. Stir in sliced onion and cook for another minute. Turn off the Instant Pot.
  3. Pour in the pineapple chunks with juice, add BBQ sauce and diced peppers; stir well.
  4. Place a trivet over the chicken mixture. In an oven-proof dish, combine rice with water, oil, and salt.
  5. Set the dish on the trivet inside the Instant Pot. Close the lid, seal the valve, and pressure cook on high for 2 minutes.
  6. Allow a natural pressure release for 10 minutes before manually releasing any remaining pressure.
  7. Remove the trivet with rice, fluff it with a fork, then thicken the sauce by simmering it with additional BBQ sauce mixed with cornstarch and water.
