- 2 Tbsp tomato paste
- 1 Tbsp chicken base
- 2 ½ Tbsp flour
- 5 cups chicken broth
- 1 can evaporated milk (12 oz)
- 2 cups cooked chicken (shredded or chopped)
- 3-4 oz baby spinach
- 1 pound shelf-stable gnocchi
Instructions
- In a large pot over medium heat, warm the reserved oil from the sun-dried tomatoes. Add onion, carrots, and celery; sauté until softened.
- Stir in chopped sun-dried tomatoes, garlic, Italian seasoning, salt, pepper, and smoked paprika; sauté for another minute.
- Mix in tomato paste and flour until combined; cook for about a minute.
- Pour in chicken broth while scraping browned bits from the pot; stir until well blended.
- Simmer partially covered for 15 minutes on low heat.
- Add cooked chicken, spinach, evaporated milk, and gnocchi; cook on medium-low for another 5-10 minutes until heated through.
