Ingredients

  • 2 large onions
  • 2 medium carrots
  • 3 Yukon gold potatoes
  • 2 cloves garlic
  • 1 lb cubed beef (or chicken/turkey)
  • 5 cups water or stock
  • 8 oz Japanese curry roux
  • 1 red apple (Fuji or Honeycrisp)
  • 8 cups medium grain white rice
  • Optional: Worcestershire sauce, ketchup, honey


Instructions

  1. Chop vegetables into large chunks and mince garlic. Grate the apple.
  2. Soak potato chunks in warm water for 15 minutes.
  3. Lightly salt the cubed beef and let sit for 10 minutes.
  4. Sear beef in a large pot over medium heat until browned, then remove.
  5. Sauté onions in the same pot with butter until caramelized.
  6. Add garlic, potatoes, carrots, and return seared beef; stir together.
  7. Pour in water (or stock), add grated apple, honey, ketchup, and Worcestershire sauce; stir well.
  8. Cover and simmer on medium-low for about 15 minutes.
  9. Once boiling, skim off any scum and check doneness by piercing potatoes.
  10. Gradually dissolve curry roux in a ladle of hot broth before adding back to the pot.
  11. Simmer uncovered on low heat for another 15 minutes until thickened.
  12. Serve over freshly cooked rice.
