Ingredients
- 7 medium Japanese sweet potatoes
- ⅔ cup sugar
- 3 egg yolks
- ¼ cup cornstarch
- 3 cups milk
- 2 tbsp unsalted butter
- 1 tsp vanilla extract
- ¼ tsp salt
Instructions
- Preheat your oven to 392°F (200°C). Wrap each sweet potato in aluminum foil and roast for 1 hour and 10 minutes until tender.
- In a saucepan, mix sugar, cornstarch, and salt. Gradually whisk in milk over medium heat until thickened.
- Lightly beat egg yolks in a small bowl. Slowly mix in some hot milk, then combine back into the saucepan.
- Cook until thickened again, then stir in butter and vanilla extract.
- Cool the custard cream while roasting potatoes, then scoop out sweet potato flesh and fill with custard.
- Sprinkle sugar on top and use a blowtorch to caramelize until dark amber.
