  • 7 medium Japanese sweet potatoes
  • ⅔ cup sugar
  • 3 egg yolks
  • ¼ cup cornstarch
  • 3 cups milk
  • 2 tbsp unsalted butter
  • 1 tsp vanilla extract
  • ¼ tsp salt


Instructions

  1. Preheat your oven to 392°F (200°C). Wrap each sweet potato in aluminum foil and roast for 1 hour and 10 minutes until tender.
  2. In a saucepan, mix sugar, cornstarch, and salt. Gradually whisk in milk over medium heat until thickened.
  3. Lightly beat egg yolks in a small bowl. Slowly mix in some hot milk, then combine back into the saucepan.
  4. Cook until thickened again, then stir in butter and vanilla extract.
  5. Cool the custard cream while roasting potatoes, then scoop out sweet potato flesh and fill with custard.
  6. Sprinkle sugar on top and use a blowtorch to caramelize until dark amber.
