Ingredients
- 2 packs ready-rolled shortcrust pastry (each 320g)
- 4 medium lemons (juice and zest)
- 200g caster sugar
- 4 medium eggs (room temperature)
- 50g unsalted butter (room temperature)
- 2 tbsp icing sugar (for dusting)
Instructions
- Preheat your oven to 200°C (180°C fan).
- Roll out the shortcrust pastry on a lightly floured surface until thin.
- Cut circles to fit into tartlet tins and press into place; prick the bases with a fork.
- Bake for about 15 minutes until golden brown and let cool completely.
- In a saucepan, combine lemon juice, zest, sugar, and butter over low heat until melted.
- Whisk eggs in a bowl, then gradually mix into the saucepan while stirring continuously.
- Cook until thickened (about 5-7 minutes), then spoon the lemon curd filling into cooled pastry cases.
- Chill in the fridge for at least an hour before serving and dust with icing sugar.
