  • 2 cups powdered sugar
  • 1 tablespoon culinary lavender, finely ground
  • 2 tablespoons heavy cream
  • 1 teaspoon vanilla extract (for buttercream)
  • A few drops of purple food coloring (optional)
  • Thin lemon slices (for garnishing)
  • Fresh lavender sprigs (for garnishing)


Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking powder, and salt. Set aside.
  3. In a large bowl, cream softened butter and sugar until fluffy. Mix in egg, vanilla extract, and lemon zest.
  4. Gradually incorporate dry ingredients into the butter mixture until combined.
  5. Roll dough to 1/4 inch thickness; cut out cookies with a cookie cutter and place on baking sheets.
  6. Bake for 8-10 minutes until edges are golden; cool completely on a wire rack.
  7. For the lavender buttercream, beat softened butter until creamy, then gradually add powdered sugar followed by ground lavender, heavy cream, and vanilla extract. Beat until fluffy.
  8. Spread buttercream on half of the cooled cookies and sandwich them with the remaining cookies.
