  • ½ cup yogurt (unflavored)
  • ¼ cup fresh lemon juice
  • 2 tablespoons poppy seeds


Instructions

  1. Preheat the oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a bowl, whisk together flour, cornstarch, baking powder, and salt.
  3. In another bowl, beat butter until creamy, then gradually add sugar until fluffy.
  4. Add eggs one at a time, mixing well after each addition. Stir in yogurt, milk, lemon juice, vegetable oil, and lemon zest.
  5. Gradually combine dry ingredients into the wet mixture; fold in poppy seeds gently.
  6. Divide batter between prepared pans and bake for about 30 minutes or until a toothpick comes out clean. Cool in pans for 10 minutes before transferring to wire racks.
  7. For the frosting, beat cold cream cheese until smooth; mix in softened butter and powdered sugar gradually along with vanilla extract and fresh lemon juice.
  8. Once cakes are completely cool, layer them with frosting in between and on top.
