Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together granulated sugar, brown sugar, and softened butter until smooth.
  3. Stir in egg yolk, lemon zest, lemon juice, and vanilla extract until well combined.
  4. In a separate bowl, whisk together flour, salt, baking powder, and baking soda. Gradually add this dry mixture to the wet ingredients until just combined.
  5. Gently fold in chopped frozen raspberries.
  6. Drop spoonfuls of dough onto the prepared baking sheet, spacing them two inches apart.
