  • ½ teaspoon salt
  • 2 cups heavy cream (for topping)
  • ½ cup powdered sugar (for topping)
  • 16 ounces crushed fresh pineapple
  • 3.4 ounces vanilla pudding mix


Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.
  2. Puree the crushed mandarin oranges in a food processor or blender.
  3. In a mixing bowl, cream the softened butter with sugar until fluffy. Add egg yolks one at a time, then stir in the mandarin puree and vanilla extract.
  4. In another bowl, sift together the cake flour, baking powder, and salt. Gradually mix into the wet ingredients alternating with milk until just combined.
  5. Pour the batter into prepared pans and bake for 25 to 28 minutes until springy when touched. Let cool for about 20 minutes before transferring.
