  • 1 head cauliflower
  • 1 can sliced black olives (2.25 oz)
  • 1/2 jar banana pepper rings (12 oz)
  • 1 red bell pepper
  • 1/3 cup diced red onion
  • 2 Tbsp chopped fresh parsley
  • 1/2 cup olive oil
  • 1/4 cup red apple vinegar
  • 1 tsp Dijon mustard
  • 1/4 tsp garlic powder
  • 1 Tbsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp freshly cracked black pepper


Instructions

  1. In a jar or bowl, mix olive oil, red apple vinegar, Dijon mustard, garlic powder, Italian seasoning, salt, and black pepper until well combined.
  2. Chop the cauliflower into small florets and add it to a mixing bowl along with sliced black olives, banana peppers, diced red bell pepper, diced red onion, and chopped parsley. Toss gently to mix.
  3. Pour the dressing over the salad mixture and toss until everything is well coated.
  4. Refrigerate for at least 30 minutes before serving to allow flavors to meld.
