  • 3 tablespoons olive oil
  • 2 tablespoons butter
  • ½ cup finely diced red onion
  • 4 cloves garlic (minced)
  • 1 cup low-sodium chicken or vegetable broth
  • 4 oz cream cheese (softened)
  • 1 cup heavy cream
  • ½ cup sun-dried tomatoes (julienned)
  • 1 teaspoon dried oregano leaves
  • 1 teaspoon dried thyme leaves
  • ½ teaspoon dried rosemary leaves
  • 1 teaspoon table salt
  • ½ teaspoon black pepper
  • 1 teaspoon red pepper flakes (optional)
  • ½ cup grated Parmesan cheese for serving
  • Chopped fresh parsley for garnish
  • Extra Parmesan for serving (to taste)


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cut the cabbage into wedges, keeping the core intact.
  3. In a cast iron skillet, heat olive oil and sear the cabbage wedges for 2–3 minutes on each side until golden brown.
  4. Remove cabbage, then add butter to the skillet. Sauté onions for 2–3 minutes; add garlic and cook for another 30 seconds.
  5. Deglaze with chicken broth, scraping up browned bits from the pan.
  6. Whisk in cream cheese until smooth; stir in heavy cream, sun-dried tomatoes, and herbs. Simmer for about 2–3 minutes.
  7. Mix in grated Parmesan until melted.
  8. Nestle cabbage wedges back into the skillet and spoon sauce over them.
  9. Cover and bake for 45 minutes; uncover and baste cabbage before baking for an additional 15–20 minutes until fork-tender.
