- 2 teaspoons salt
- 2 tablespoons white vinegar
- 1/2 cup soy sauce
- 1/2 cup water
- 1/3 cup honey
- 1/4 small yellow onion (diced)
- 4 garlic cloves (minced)
- 2 stalks scallions (minced)
- 1 Korean red pepper (sliced)
- 1 serrano pepper (sliced)
- 1 tablespoon toasted sesame seeds
Instructions
- In a medium saucepan, boil water with salt and vinegar. Using a spider strainer or slotted spoon, gently lower the eggs into the boiling water. Cook for 6 minutes for jammy yolks.
- Remove the eggs and place them in a water bath for 10 minutes to cool before peeling.
- In a mixing bowl, combine soy sauce, water, honey, diced onion, minced garlic, scallions, sliced peppers, and sesame seeds to create the marinade.
- Place peeled eggs in an airtight container and pour the marinade over them. Ensure they are fully submerged and refrigerate for at least 6 hours or overnight.
- Serve over rice or as desired, drizzled with extra marinade.
