  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3-4 garlic cloves, minced
  • 2 tbsp tomato paste
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • ½ tsp smoked paprika
  • 1 tsp dried oregano
  • 1 ½ cups brown or green lentils (rinsed)
  • 6 cups vegetable broth (or chicken broth)
  • 1 bay leaf
  • 1 can diced tomatoes (or 2 fresh, chopped)
  • 2 cups fresh spinach or kale (optional)
  • Juice of 1 lemon
  • Salt and pepper, to taste


Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion, carrots, and celery; sauté for 5–7 minutes until softened.
  2. Stir in minced garlic, tomato paste, cumin, coriander, smoked paprika, and oregano; cook for an additional 1–2 minutes until fragrant.
  3. Add rinsed lentils, vegetable broth (or chicken broth), bay leaf, and diced tomatoes to the pot. Bring to a boil; then reduce heat to simmer uncovered for 25–30 minutes until lentils are tender.
  4. If using spinach or kale, stir into the soup until wilted. Squeeze lemon juice in and season with salt and pepper to taste.
