- 1 cup sweet red bean paste or whipped vanilla cream
- ½ cup potato starch or cornstarch (for dusting)
- Pinch of salt
Instructions
- Prep strawberries by washing, hulling, and drying them thoroughly.
- Wrap each berry in sweet red bean paste or whipped vanilla cream and chill briefly.
- In a mixing bowl, combine mochiko, sugar, salt, and water until smooth. Microwave in short bursts for about 2½–3½ minutes or steam until glossy and stretchy.
- Cool the dough slightly on a well-starched surface before handling.
- Divide the dough into 8 equal pieces, flatten each into circles about 3 inches wide.
- Place each strawberry tip-side down on a dough circle, fold over the berry, and seal by pinching gently.
- Let the wrapped mochi rest for about 10 minutes before serving.
