Ingredients

  • 1 cup caster sugar
  • 300ml water
  • 300g blueberries
  • 5 eggs, separated
  • 250g mascarpone
  • 1/3 cup lemon curd
  • 1/2 pandoro or Madeira cake, cut into slices


Instructions

  1. In a saucepan, combine caster sugar and water over low heat until dissolved.
  2. Increase heat and simmer for about 5 minutes. Set aside one-third of the syrup.
  3. Add blueberries to the remaining syrup and cook over low heat for about 2 minutes until juices are released.
  4. Mix arrowroot with cold water in a bowl. Stir this mixture into the blueberries and cook until thickened.
  5. Beat egg yolks with remaining sugar until pale; mix in mascarpone and lemon curd.
  6. Whip egg whites until soft peaks form; gently fold into mascarpone mixture.
  7. Layer sliced cake in a glass dish, brushing with syrup, then alternate layers of mascarpone mixture and blueberry sauce.
  8. Chill for at least 4 hours before serving with whipped cream and reserved blueberries on top.
