  • 1 kg potatoes (scrubbed, boiled, peeled, and diced)
  • 1 large red onion (thinly sliced)
  • 1 small bunch fresh parsley (finely chopped)
  • 1/2 bunch fresh mint (finely chopped)
  • 4 green onions (sliced)
  • 5 tablespoons extra virgin olive oil
  • Juice of 2 lemons
  • 1 1/2 teaspoons fine salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 teaspoon sumac


Instructions

  1. Boil the scrubbed potatoes in a large pot of salted water until tender (about 12-15 minutes). Drain and let cool slightly.
  2. Dice the cooled potatoes into bite-sized cubes.
  3. In a large mixing bowl, combine the diced potatoes with sliced red onion, green onions, parsley, and mint.
  4. Drizzle olive oil and lemon juice over the mixture; season with salt, black pepper, and sumac.
  5. Gently toss everything together until well combined.
