  • unbaked pie crust
  • 10 ounces peanut butter chips
  • 1 (14-ounce) can sweetened condensed milk
  • 3 Tablespoons salted butter
  • 2 cups miniature vegan marshmallows
  • 1 1/2 cups dry roasted unsalted peanuts
  • 1/2 cup (100g) granulated sugar
  • 3 Tablespoons salted butter (cubed)
  • 1/4 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon kosher salt


Instructions

  1. Preheat oven to 400°F and roll out the pie crust in a 9-inch pie plate. Crimp edges and prick the bottom.
  2. Bake the crust for 30 minutes (15 minutes with weights).
  3. In a saucepan, melt peanut butter chips with sweetened condensed milk and butter over medium heat.
  4. Stir in vegan marshmallows until melted and combined.
  5. Pour the mixture into the baked crust and top with dry roasted peanuts.
  6. Make caramel by melting sugar until amber; add butter and heavy cream.
  7. Drizzle cooled caramel over peanuts on top of the pie.
  8. Chill in the refrigerator for at least 4 hours before serving.
