- 1/2 cup creamy peanut butter
- 2 large eggs

- 1 1/2 cups mashed bananas (about 3 or 4 overripe bananas)

Instructions
- Preheat your oven to 350°F (175°C) and grease a 9" x 5" loaf pan.
- In a mixing bowl, whisk together flour, cinnamon, baking powder, baking soda, and salt.
- In another bowl, beat the softened butter, brown sugar, and peanut butter until fluffy. Add eggs one at a time and mix in vanilla extract.
- Gradually add the dry ingredients to the wet mixture along with the sour cream until fully combined.
- Gently fold in the mashed bananas and optional nuts.
- Pour batter into the prepared loaf pan and bake for about 50 to 55 minutes until golden brown; check doneness with a toothpick.
