  • 2 cups fresh pineapple chunks
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 2 tablespoons honey
  • 1 tablespoon sriracha sauce
  • 1 tablespoon olive oil
  • 1 teaspoon ginger, grated
  • Salt and pepper to taste
  • 2 cups jasmine rice
  • 4 cups water
  • Fresh cilantro for garnish


Instructions

  1. Rinse jasmine rice under cold water until the water runs clear.
  2. In a rice cooker or pot, combine the rinsed rice with water. Cook according to your device's instructions until fluffy.
  3. In a large skillet or wok, heat olive oil over medium-high heat.
  4. Add bite-sized pieces of chicken breast. Season with salt and pepper.
  5. Cook for about 5–7 minutes until golden brown on all sides.
  6. Stir in garlic, onion, red bell pepper, yellow bell pepper, ginger, and pineapple chunks.
  7. Sauté until vegetables are tender, about 4–5 minutes.
  8. In a small bowl, mix soy sauce, honey, and sriracha sauce.
  9. Pour this mixture over the sautéed chicken and vegetables; stir well to combine.
