  • 1 pound chicken breast, cubed
  • 1 cup pineapple, cubed
  • 2 cups chicken broth
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 cup jasmine rice
  • Salt and pepper to taste
  • 1 tablespoon soy sauce
  • 1 teaspoon ginger, grated
  • ¼ cup green onions, sliced for garnish
  • 1 tablespoon sesame seeds for garnish


Instructions

  1. Heat olive oil in a large skillet over medium heat. Add chicken cubes and cook until golden brown and cooked through. Remove from skillet and set aside.
  2. In the same skillet, sauté onion, garlic, and bell pepper until softened.
  3. Stir in pineapple chunks and cook for an additional 2 minutes until heated through.
  4. Add jasmine rice, chicken broth, soy sauce, ginger, salt, and pepper; bring to a boil.
  5. Lower heat, cover, and simmer for 18-20 minutes until rice is tender and liquid is absorbed.
  6. Return cooked chicken to the skillet, mix well, and heat through.
  7. Garnish with green onions and sesame seeds before serving.
