Ingredients

  • 1/2 cup almond butter
  • 1/2 cup organic pumpkin puree
  • 2 Tbsp coconut oil, melted
  • 2 Tbsp maple syrup
  • 1 tsp vanilla extract
  • 1/2 cup plant-based vanilla protein powder
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 1/4 cup miniature dark chocolate chips
  • 1/2 cup dark chocolate chips
  • 2 Tbsp almond butter


Instructions

  1. Line an 8" x 4" loaf pan with parchment paper.
  2. In a mixing bowl, combine pumpkin puree, almond butter, melted coconut oil, maple syrup, and vanilla extract until smooth.
  3. Add plant-based protein powder, cinnamon, and salt; mix until thickened.
  4. Fold in miniature dark chocolate chips.
  5. Press the mixture into the lined pan and freeze while preparing the topping.
  6. Melt dark chocolate and stir in almond butter; pour over the base layer.
  7. Chill in the fridge for at least one hour before cutting into bars.
