  • 2 1/2 tsp pumpkin spice
  • 225 g dark brown sugar
  • 280 g pumpkin purée
  • 75 g vegetable oil
  • 2 eggs
  • 1 tsp vanilla extract
  • 200 g butter
  • 15 g dark brown sugar
  • 100 g full-fat cream cheese
  • 345 g powdered sugar


Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In one bowl, mix flour, baking powder, baking soda, salt, and pumpkin spice.
  3. In another bowl, blend dark brown sugar, pumpkin purée, vegetable oil, eggs, and vanilla until smooth.
  4. Gradually combine the dry ingredients into the wet mixture until just mixed.
  5. Fill cupcake liners two-thirds full and bake for about 23 minutes or until a toothpick comes out clean.
  6. Allow cooling for 5 minutes before transferring to a rack.
  7. For the frosting, beat together butter and dark brown sugar until creamy; add cream cheese and slowly mix in powdered sugar and vanilla until well combined.
  8. Frost cooled cupcakes generously.
