  • ⅓ cup canned pumpkin
  • ¼ teaspoon cinnamon
  • ½ cup honey
  • ½ cup vanilla protein powder
  • 1 ½ cups rolled oats
  • salt (to taste)
  • 1 ½ teaspoons pumpkin pie spice
  • ½ cup mini chocolate chips


Instructions

  1. In a mixing bowl, combine almond butter, canned pumpkin, honey, vanilla protein powder, rolled oats, cinnamon, pumpkin pie spice, and salt. Mix until smooth using a rubber spatula.
  2. Gently fold in mini chocolate chips until evenly distributed.
  3. Using a cookie scoop or spoon, drop spoonfuls of the mixture onto a baking sheet to form balls (approximately 26).
  4. Refrigerate until firm to the touch. Store in an airtight container in the fridge or freezer for later enjoyment.
