  • 18 (6-inch) corn tortillas
  • 1 (28 oz) can green chile enchilada sauce
  • 1 (16 oz) package shredded Monterey Jack cheese
  • 1 (8 oz) container reduced-fat sour cream


Instructions

  1. Preheat oven to 350°F (175°C) and grease a medium baking dish.
  2. Season chicken breasts with garlic salt and bake for 45 minutes until fully cooked.
  3. Allow chicken to cool, then shred into bite-sized pieces.
  4. Optionally char tortilla halves over an open flame.
  5. Pour enchilada sauce into the baking dish and layer tortilla halves on top.
  6. Add half of the shredded chicken, one-third of the cheese, half of the sour cream, and one-third of the remaining enchilada sauce; repeat layering.
  7. Cover with foil and bake for another 45 minutes before serving.
