  • 1 oz freeze-dried raspberries
  • 6 oz white chocolate melting wafers
  • 3 oz heavy cream
  • 8 oz dark chocolate melting wafers
  • Extra freeze-dried raspberries for decoration


Instructions

  1. Prepare raspberry powder by grinding freeze-dried raspberries in a food processor. Combine with white chocolate melting wafers in a bowl.
  2. Heat the cream in a saucepan until simmering. Pour over the chocolate mixture and stir until fully melted and combined.
  3. Chill the filling in the refrigerator for 45 minutes to 1 hour until firm enough to scoop.
  4. Roll the chilled filling into balls and place on a parchment-lined baking sheet; refrigerate again for 1 hour.
  5. Melt dark chocolate using a double boiler method until smooth. Dip each truffle in melted chocolate, allowing excess to drip off before returning to the baking sheet.
  6. Optionally drizzle extra melted chocolate over truffles and sprinkle with crushed freeze-dried raspberries.
  7. Chill again for 30 minutes to set completely.
