- 3/4 cup white chocolate chips (Plus more on top of the cookies)
Instructions
- Melt the butter in a microwave-safe bowl and allow it to cool.
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In one mixing bowl, sift together flour, baking powder, baking soda, and salt.
- In another bowl, combine melted butter, brown sugar, granulated sugar, vanilla extract, egg, and egg yolk until well mixed.
- Gradually add the dry ingredients to the wet mixture using a rubber spatula and fold gently until combined.
- Carefully fold in the thawed raspberries and white chocolate chips.
- Using a cookie scoop, portion out the dough onto prepared baking sheets, leaving space between each cookie.
- Bake for 13-15 minutes or until golden brown around the edges.
- Add extra white chocolate chips on top immediately after removing from the oven and let cool on a wire rack.
