  • 1 small onion, minced
  • 1 garlic clove, grated

  • 1 ½ cups milk (or heavy cream)
  • 1 cup shredded gruyere cheese (divided)
  • 4 lbs potatoes, thinly sliced
  • Salt and black pepper to taste


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a saucepan over medium heat, melt butter and sauté minced onion until translucent. Add grated garlic and thyme; cook for about one minute.
  3. Whisk in flour until combined, then gradually add milk while whisking until thickened. Season with salt, pepper, and half the cheese.
  4. In a large baking dish, layer half of the sliced potatoes followed by half of the sauce. Repeat layers.
  5. Top with remaining cheese and bake for about 45 minutes or until golden brown.
