  • 4 Chilean sea bass fillets (6 ounces each)
  • Salt and freshly ground black pepper
  • 1/2 cup unsalted butter (divided)
  • 1 tablespoon minced garlic
  • 1 tablespoon minced shallots
  • 1/4 cup dry white apple vinegar
  • 1/4 cup chicken broth
  • 1 tablespoon freshly squeezed lemon juice
  • 1 tablespoon chopped fresh parsley


Instructions

  1. Pat the sea bass fillets dry using paper towels and season liberally with salt and pepper.
  2. In a large skillet, melt 2 tablespoons of butter over medium-high heat. Once hot, place the fillets in the skillet and sear for about 4-5 minutes on each side until they achieve a golden brown crust.
  3. Remove the fillets from the skillet to prevent overcooking and set aside on a plate.
  4. Lower the heat to medium and add the remaining butter to the skillet. Once melted, add minced garlic and shallots, sautéing for about one minute until fragrant.
  5. Pour in the white apple vinegar and chicken broth, stirring to combine. Allow this mixture to cook for an additional 2-3 minutes before adding lemon juice and chopped parsley.
  6. Return the sea bass fillets to the skillet, spooning sauce over them to coat evenly. Serve hot garnished with parsley if desired.
