Ingredients

  • 1/4 cup shredded coconut
  • 1/2 cup creamy almond butter
  • 3 tablespoons pure maple syrup
  • 2 large soft medjool dates (pitted)
  • 1 teaspoon pure vanilla extract
  • 1/2 cup old-fashioned rolled oats
  • 1 scoop vanilla protein powder
  • 1/4 teaspoon kosher salt
  • 1 tablespoon chia seeds
  • 1 tablespoon mini chocolate chips
  • 1/2 cup chocolate chips
  • 1/2 teaspoon coconut oil
  • Flaky sea salt (for sprinkling on top)


Instructions

  1. Preheat your oven to 350°F. Line a baking sheet with parchment paper and spread the shredded coconut evenly.
  2. Toast the coconut in the oven for about 5 minutes until lightly golden, stirring once. Allow it to cool.
  3. In a food processor, blend almond butter, maple syrup, pitted dates, vanilla extract, rolled oats, protein powder, and salt until smooth.
  4. Stir in 1/4 cup of toasted coconut and mini chocolate chips. Form into tablespoon-sized balls.
  5. Melt chocolate chips with coconut oil in a microwave-safe bowl until smooth.
  6. Dip each ball's bottom into melted chocolate and place back on the baking sheet. Drizzle excess chocolate on top and sprinkle with remaining toasted coconut and flaky sea salt.
  7. Refrigerate for about an hour until the chocolate hardens.
