  • 1/4 cup Silk Vanilla Dairy-Free Yogurt (or Greek yogurt)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • Salt to taste


Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a Non-Stick Muffin Pan.
  2. In a large bowl, whisk together all ingredients until smooth. Be careful not to over-mix.
  3. Using a large cookie scoop or measuring cup, fill each muffin cavity no more than three-quarters full.
  4. Bake for about 20 minutes until the tops feel set and springy; check doneness with a toothpick.
  5. Allow the muffins to cool in the pan for about 10 minutes before transferring them to a wire rack.
