Ingredients

  • 1 medium yellow onion, diced
  • 4 medium carrots, sliced
  • 4 stalks celery, sliced
  • 4 cloves garlic, minced
  • 8 cups low-sodium chicken stock or broth
  • 2 large boneless, skinless chicken breasts (about 1.5 lbs)
  • 8 ounces egg noodles
  • Fresh parsley and lemon juice for finishing
  • Salt and pepper, to taste


Instructions

  1. In a large slow cooker, add all ingredients except for egg noodles, parsley, and lemon juice. Season with salt and pepper.
  2. Cook on low for 6-8 hours until chicken is fully cooked and veggies are tender.
  3. Remove chicken from the slow cooker, shred it with two forks, then return it to the pot.
  4. Add egg noodles and stir to combine. Cook on low for an additional 5-10 minutes until noodles are tender.
  5. Stir in lemon juice and fresh parsley before serving.
