- 6 chicken thighs (bone-in, skin-on)
- 2 pounds baby red potatoes
- 2 shallots, chopped
- 3 cloves garlic, minced
- 3 cups broccoli florets
- 1 ½ teaspoons smoked paprika
- Kosher salt and freshly ground black pepper, to taste
- 2 tablespoons unsalted butter
- ¼ cup white apple vinegar
- ¼ cup chicken stock
- ½ cup heavy cream
- 1 ½ tablespoons freshly squeezed lemon juice
- 1 tablespoon cornstarch
- 1 teaspoon dried thyme
Instructions
- Season chicken thighs with smoked paprika, salt, and pepper.
- Sear them in a cast iron skillet with butter until golden brown on both sides.
- Add baby red potatoes, white apple vinegar, chicken stock, shallots, garlic, and thyme to the slow cooker. Stir well and season.
- Arrange seared chicken over the potato mixture.
- Cover and cook on low for 5-6 hours until chicken is cooked through.
- Add broccoli for the last 30 minutes of cooking.
- For the sauce, whisk heavy cream, lemon juice, and cornstarch; stir into the slow cooker and cook on high for an additional 10-15 minutes until thickened.
