  • 10 ounces mini vegan marshmallows (for base)
  • 6 cups crispy rice cereal
  • ½ cup crushed graham crackers
  • 1 cup mini vegan marshmallows (for filling)
  • ½ cup chocolate spread or melted chocolate
  • 1 cup semi-sweet chocolate chips (for topping)
  • 1 tablespoon coconut oil or butter


Instructions

  1. In a saucepan over medium-low heat, melt the butter, then stir in the mini vegan marshmallows until smooth.
  2. Remove from heat and fold in the crispy rice cereal and crushed graham crackers until fully coated.
  3. Transfer the mixture onto greased parchment paper and press it into a rectangle about ½-inch thick.
  4. Spread your choice of chocolate layer evenly over the rectangle and sprinkle with the remaining mini vegan marshmallows.
  5. Roll tightly from one long edge using parchment to guide you.
  6. Wrap in parchment paper and refrigerate for 30–45 minutes until set.
  7. Melt the chocolate chips with coconut oil in a microwave-safe bowl, drizzle over the log, and slice into rounds.
