- 1 tablespoon olive oil
- 1 medium onion, diced

- 4 cups vegetable broth
- 3 tablespoons miso paste
- 1 can coconut milk (full-fat)
- Salt and pepper to taste
- Chopped green onions for garnish
- Chopped cilantro for garnish
Instructions
- In a large pot over medium heat, add olive oil. Sauté the diced onion until translucent.
- Stir in minced garlic and grated ginger for about 1 minute until fragrant.
