Ingredients

  • 4 cups chopped carrots
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 4 cups vegetable broth
  • 3 tablespoons miso paste
  • 1 can coconut milk (full-fat)
  • Salt and pepper to taste
  • Chopped green onions for garnish
  • Chopped cilantro for garnish


Instructions

  1. In a large pot over medium heat, add olive oil. Sauté the diced onion until translucent.
  2. Stir in minced garlic and grated ginger for about 1 minute until fragrant.
  3. Add the chopped carrots and pour in vegetable broth. Bring to a boil, then reduce heat and simmer until carrots are tender (about 15 minutes).
  4. Blend the soup until smooth using an immersion blender or countertop blender.
  5. Return to low heat, stir in miso paste until dissolved, then add coconut milk and season with salt and pepper.
  6. Serve in bowls topped with chopped green onions and cilantro.
