  • 1 Small red onion, thinly sliced
  • 8 Cups romaine lettuce, roughly chopped or preferred greens
  • 4 Large eggs, hard boiled and peeled
  • 8 slices nitrate-free turkey bacon, sugar-free
  • Sea salt and cracked black pepper, if needed
  • 1 large avocado, thinly sliced
  • 1 Cup cherry tomatoes, sliced in half
  • 1.25 Lb flank steak or strip steak
  • 1 Tbsp avocado oil or olive oil


Instructions

  1. Cook the turkey bacon until crispy, then crumble it into pieces.
  2. Hard boil the eggs by placing them in boiling water for about 10 minutes. Cool them under cold water before peeling.
  3. Season both sides of the steak generously with sea salt and cracked black pepper.
  4. Heat a cast iron skillet or grill over medium-high heat; add a drizzle of oil.
  5. Cook the steak for about 3 minutes per side for medium-rare or 4 minutes for medium.
  6. Transfer the cooked steak to a cutting board, cover it with foil, and let it rest for 10 minutes.
  7. In a large bowl, layer the chopped romaine lettuce, sliced cherry tomatoes, red onion slices, hard-boiled eggs, crumbled turkey bacon, and sliced avocado.
  8. Slice the rested steak with a sharp knife into strips. Place them on top of the assembled salad.
  9. In a blender, combine avocado oil (or olive oil) with other dressing ingredients, blending until smooth and creamy.
  10. Drizzle the avocado dressing over the salad or serve it on the side.
