  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 ripe bananas
  • 1/2 cup granulated sugar
  • 1 egg
  • 1/2 cup sour cream or yogurt
  • 1/3 cup milk
  • 1 Tbsp vanilla extract
  • 1 1/2 cup diced strawberries (fresh or frozen)


Instructions

  1. Preheat your oven to 425°F and line a muffin tin with liners or spray with nonstick spray.
  2. In a large bowl, mash the ripe bananas and mix in sugar, sour cream, milk, egg, and vanilla extract until smooth.
  3. Sift together flour, baking powder, baking soda, and salt into the banana mixture.
  4. Gently fold in the dry ingredients until just combined; be careful not to overmix.
  5. Fold in the diced strawberries evenly.
  6. Fill each muffin cup to the top with batter and optionally add more strawberries on top.
  7. Bake at 425°F for 5 minutes, then reduce heat to 350°F and bake for another 10-12 minutes until golden brown on top.
  8. Allow muffins to cool slightly before transferring to a wire rack.
