  • 1 cup boiling water
  • 2 cups fresh strawberries (chopped)
  • ¼ cup granulated sugar (for filling)
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch mixed with 1 tbsp water
  • 8 oz semi-sweet chocolate (chopped)
  • 1 cup heavy cream


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease and flour two 9-inch round cake pans.
  3. In a mixing bowl, combine flour, cocoa powder, sugar, baking powder, baking soda, and salt. Whisk until blended.
  4. Add eggs, milk, vegetable oil, and vanilla extract; mix until smooth. Gradually stir in boiling water.
  5. Divide batter between prepared pans and bake for about 30 minutes or until a toothpick comes out clean. Cool in pans for ten minutes before transferring to wire racks.
  6. For the filling, combine chopped strawberries, sugar, and lemon juice in a saucepan over medium heat for about five minutes until softened. Stir in cornstarch mixture until thickened and cool.
  7. For the ganache, heat cream until hot and pour over chopped chocolate; stir until smooth.
  8. Assemble by layering one cake with half the strawberry filling, topping with the second layer, frosting with ganache, and decorating with fresh strawberries.
