- 1 tbsp cornstarch mixed with 1 tbsp water
- 8 oz semi-sweet chocolate (chopped)
- 1 cup heavy cream
Instructions
- Preheat the oven to 350°F (175°C).
- Grease and flour two 9-inch round cake pans.
- In a mixing bowl, combine flour, cocoa powder, sugar, baking powder, baking soda, and salt. Whisk until blended.
- Add eggs, milk, vegetable oil, and vanilla extract; mix until smooth. Gradually stir in boiling water.
- Divide batter between prepared pans and bake for about 30 minutes or until a toothpick comes out clean. Cool in pans for ten minutes before transferring to wire racks.
- For the filling, combine chopped strawberries, sugar, and lemon juice in a saucepan over medium heat for about five minutes until softened. Stir in cornstarch mixture until thickened and cool.
- For the ganache, heat cream until hot and pour over chopped chocolate; stir until smooth.
- Assemble by layering one cake with half the strawberry filling, topping with the second layer, frosting with ganache, and decorating with fresh strawberries.
