  • 540 g all-purpose flour
  • 65 g granulated sugar
  • 1 tsp salt
  • 1 large egg
  • 80 g unsalted butter (softened)
  • 250 g strawberries (fresh or frozen)
  • 50 g granulated sugar (for filling)
  • Juice of half a lemon
  • 100 g cream cheese (softened)
  • 40 g unsalted butter (softened for glaze)
  • 60 g powdered sugar
  • 1 tsp vanilla extract
  • 2 tbsp strawberry puree


Instructions

  1. Prepare the strawberry filling by cooking strawberries with lemon juice and sugar until thickened. Blend until smooth and cool.
  2. Make the dough by mixing flour, sugar, salt, and yeast in a stand mixer. Add warm milk, butter, and egg; knead until smooth.
  3. Let the dough rise in a warm place until doubled in size, about 2 hours.
  4. Roll out the dough, spread the cooled strawberry filling evenly, roll tightly into a log, and cut into slices.
  5. Arrange rolls in a greased baking dish; let rise for another hour while preheating the oven to 180°C (350°F).
  6. Bake for 20-25 minutes until golden brown.
  7. For the glaze, beat together cream cheese, softened butter, powdered sugar, vanilla extract, and strawberry puree until smooth.
