Ingredients

Scale
  • 16 oz cream cheese
  • ½ cup granulated sugar
  • 1 tsp vanilla extract
  • ½ cup sour cream
  • 2 large eggs
  • ½ cup strawberry puree or jam
  • 1 ½ cups crushed graham crackers or golden Oreos
  • ¼ cup unsalted butter (for crust)
  • 1 cup crushed golden Oreos or vanilla wafers (for topping)
  • ½ cup freeze-dried strawberries

Instructions

  1. Preheat the oven to 325°F (163°C). Line a mini muffin tin or an 8×8-inch pan with parchment paper.
  2. In a mixing bowl, combine the crushed graham crackers (or golden Oreos) with melted butter. Press this mixture into the bottom of your prepared pan evenly.
  3. In another bowl, beat together the cream cheese and granulated sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in sour cream, vanilla extract, and strawberry puree until fully combined.
  4. Pour the cheesecake mixture over the crust in your pan. Bake for 20–25 minutes if using mini muffin tins or 35–40 minutes if using an 8×8-inch pan. The cheesecake should be set with a slight jiggle in the center.
  5. Allow the baked cheesecake bites to cool to room temperature. Then refrigerate for at least four hours before adding the topping.
  6. Combine crushed Oreos (or vanilla wafers) with freeze-dried strawberries mixed with melted butter. Once chilled, sprinkle this crunchy topping over your cheesecake bites before serving.
