Ingredients
- 250 grams T55 flour
- 50 grams powdered sugar
- 130 grams butter
- 2 tablespoons water
- 1 egg yolk
- 220 ml milk
- 30 grams sugar
- 4 egg yolks
- 20 grams cornstarch
- 1 Tahitian vanilla bean
- 250 ml cold heavy cream
- 400 grams strawberries
Instructions
- Prepare the shortcrust pastry by mixing flour, powdered sugar, and salt in a bowl. Cut in butter until crumbly. Add egg yolk and water; mix into dough. Chill for 30 minutes.
- Preheat oven to 180°C (350°F). Roll out dough, fit into tart pan, prick the bottom, and bake for about 25 minutes until golden brown. Cool completely.
- For the diplomat cream, heat milk with half the sugar. Whisk egg yolks, remaining sugar, and cornstarch until smooth; combine with warm milk and cook until thickened.
- Allow custard to cool slightly before folding in whipped cream and dissolved vegan gelatin.
- Pour diplomat cream into cooled tart shell; chill for at least two hours.
- Top with halved strawberries before serving.
